Antoni Yelamos, the Senior Director of Operations for Mercado Little Spain, is a hands-on hospitality professional with more than 25 years of experience developing and repositioning concepts, authoring masterful menus, and establishing talent-packed teams. The Barcelona native — who worked with a Spanish restaurant group in New York City in 1991 — was instrumental in creating ThinkFoodGroup in 1996, as an operating founding partner with chef José Andrés. Following his departure, Antoni founded Food Culture, a boutique company specializing in conceptualizing and developing dining and bar concepts for hotels, including the W South Beach Hotel. After Food Culture was acquired by Streetsense in 2013, Antoni became Director of the Eat + Drink Studio, where he oversaw concept visioning and development, operational analysis, oversight, and full concept implementation with projects spanning three continents. He rejoined ThinkFoodGroup in 2021.
